Tasty but healthy omelette

I’m the type of girl who LOVES ( hence the upper case letters) to cook in my spare time. There’s nothing better than making your own food and knowing exactly what is in it. I love to try new recipes and I hope to share ones that I find and like every now and again with my followers. Recently I’ve been thinking about Spanish style omelette’s. I would not be a huge fan of omelette’s because I find them quite plain a lot of the time but I decided to try and make a healthy omelette that had a lot of taste. Basically what I made was an omelette with lots of vegetables and potatoes added to it. I love eating fruit but I would not be a big vegetable eater. I like sweet things like a lot of people do. As you can see below I used two tomatoes, an onion, a pepper , two potatoes, cheese, cashew nuts and three eggs. I was going to add some ham as well but I ended up forgetting to put it in so this recipe is okay for lacto vegetarians to make and eat.  I used no salt or seasoning in this recipe and with all of the different tastes the ingredients offer, I didn’t need them anyway.

 

 

 

 

 

 

 

 

Ingredients:

 

  • Two potatoes
  • One pepper
  • Two tomatoes
  • One onion
  • Cheese
  • A couple handfuls of Cashew nuts.
  • Three eggs

Method:

  

This recipe is very easy to make. You start off by chopping up all pf the vegetables, grating the cheese and then you fry the potato chunks until they are a golden colour. Once you have that done, you add the diced onions and sauté them for five minutes. Next you add your tomatoes and peppers. It’s all very simple and you don’t have to wait a long time to put them all in.  Lastly you throw your cashew nuts into the pan and let them fry.


Next you get your eggs ready. Crack your eggs into a separate jug and add your cheese in. Then throw all of your vegetables in as well, once it’s all mixed in, pour the mixture into a saucepan and allow it to cook until the mixture has no gooiness left.
